What I Did: My sister and I decided to try this super easy recipe to send to our cousins who are stationed overseas. We used store bought Snickerdoodle dough and mini Rolos. We followed the directions exactly. The first round was overdone so we reduced the baking time. The fails just kept piling up. First fail: The recipe called for an ungreased pan which meant the cookies were fused to the pan. Second fail: The caramel melted out the bottom of the cookies and became super glue on the pan, even when we greased it. Couldn’t remove the cookies without breaking them apart. Third fail: Trying to take the cookies off before they cooled caused the middles to rip out, due to the warm caramel sticking to the spatula. End result: Cookie pieces. Yummy but not pretty!

Next Time I Will: We tried everything! I have no idea how the blogger got her cookies to look so good.

Have you tried liming the baking tray with baking/silicon paper? It’s marvelous stuff. What about a silicon baking sheet or mat to lay in your tin?

10. January - 5:40 pmNext time use parchment or baking paper. Adding more fats/oils will “fry” the bottom of the cookies, that is why the cookie sheet is not greased.

13. January - 8:38 pmI even got my inspiration from the same blog post. I even posted about it a few months back in my own blog (summerbrooke13.blogspot.com). We shoved all of ours on one pan so they kinda smooshed together. Still tasty.
All I do is use a log/roll of sugar cookie (or snicker doodle) dough. Cut it in slices, then put a rolo (i used normal sized rolos) in the center and roll it in a ball so that the rolo is in the center. The first time I made them I used a pan sprayed with butter cooking spray. For Christmas I used a silicone baking mat. I found that the baking mat made the cookies more flat, whereas when I used a greased pan you could see a bump in the done cookie where the rolo was sitting. But I have never burnt them or had any other issues.
I always cook them according to packaging. As far as timing, I just check on them a bunch, take them out when they look slightly brown.

You should use a rectangle baking sheet so you can have an even spaced cookies that will bake easier, also line them with parchment paper (much cheaper then a silicon mat). Your rolos probably melted through the bottom because you rolled your dough too thin, I’d start with a little bit bigger of a pice and not roll it so thin. That should fix it all!
17. January - 2:39 pmSorry to hear they didn’t work out. I recommend lining the pan with parchment paper and dusting the rolos with flour before putting in the dough.
